Mississippi Mud Cake

Looking through my grandmother’s recipe box I came across this recipe. I remember having this as one of the many desserts she use to have for each visit. My grandmother would always ask each grandkid, there were 5 of us what we wanted for dessert next time we visited. I think I always asked for apple pie or chocolate pie. Then someone would ask for this or something else so you can imagine how many desserts there where. I do miss going to the country to visit her and all the wonderful meals.

Cake:
4 eggs
2 cups sugar
½ cup Cocoa
1 teaspoon vanilla
1 cup melted butter
1 ½ cups flour
2 teaspoons baking powder
1 cup nuts (I used pecans)
1 jar marshmallow cream

1. Preheat oven to 350 degrees.
2. Combine eggs and sugar and beat until creamy.
3. Add melted butter, flour, cocoa, vanilla and nuts. Mix well.
4. Pour into a greased pan and bake for 25 – 30 minutes.
5. As soon as cake is removed from oven cover with marshmallow cream.

Icing:
½ cup butter
½ cup milk
½ cup cocoa
2 cups powdered sugar
1 teaspoon vanilla
1 cup nuts (I used pecans)

1. Melt butter and removed from heat.
2. Add milk, cocoa, sugar and vanilla. Mix well.
3. Add nuts and mix well.
4. Pour over top of marshmallow cream.

Chicken Noodle Soup

I use to always buy Chicken Noodle soup in a can. I was raised on the Campbell's kind as a child. We never had homemade chicken noodle soup. Last year I came across a recipe and I had to try it. To my surprise it turned out so much better then the can soup. Since then I have adapted that recipe into this one and this has become a staple in our house on those cold and rainy days.

Ingredients:
1 cup pasta
1-2 chicken breast cooked and diced
½ teaspoon vegetable oil
6 cups chicken broth
½ teaspoon poultry seasoning
1 cup mixed veggies
salt and pepper to taste

Directions:
1. Combine chicken, chicken broth, oil, poultry seasoning and veggies. Bring to a boil.
2. Once to a boil reduce heat to medium low and cook for 20 minutes.
3. Add pasta and cook for another 10 to 15 minutes until pasta is done. Salt and pepper to taste.

Oatmeal Cookies

This is one of my most requested cookies I make. This recipe came from my mom who always told the story of how she got the recipe. My mother was an elementary school teacher and one year one of her students gave her these cookies along with the recipe. Even when my mother quit teaching she still made these cookies. I think he helped her remember how much she loved teaching and how much the kids meant to her.

Ingredients:
1 cup shortening
1 cup sugar
1 cup brown sugar
1 teaspoon vanilla
1 teaspoon baking soda
1 ½ cups flour
2 cups Old Fashion Oats

Directions:
1. Preheat oven to 375 degrees.
2. Cream shortening and gradually add the sugars. Add eggs and vanilla.
3. Sift flour, salt and baking soda. Slowly add to wet ingredients.
4. Stir in oats.
5. Form into small balls and bake for 10 to 12 minutes.

Grandma's Chocolate Pie



Ingredients:
2 cups sugar
3 egg yolks
3 egg whites
1 can evaporated milk
2 teaspoons vanilla
3 Tablespoons Cocoa powder
2 Tablespoon butter
Pinch of Salt
¼ cup flour
1 9 inch pie crust

Directions:
1. Preheat over to 350 degrees F
2. In a saucepan, whisk flour, 1 ½ cups sugar, coca, vanilla and evaporated milk. Beat egg yolks and stir into pan. Add butter and cook over medium heat until butter is melted. Sit constantly.
3. Add mixture to an unbaked pie shell.
4. Cook for 35 to 45 minutes, or until pie is not wobbly when shaken.
5. Beat egg white until soft peaks form. Gradually add ½ cup of sugar, beating constantly until stiff peak forms. Spread over pie.
6. Return pie to oven and cook for 10 minutes, or until meringue is golden in color.

Chocolate Surprise Cookies

I posted this recipe last week because I could not find my grandmother's recipe. Yesterday when I pulled all of her recipes out of her box because they are so many stuffed in there I finally found it. There are not many changes from the first one I posted but I went ahead and deleted that one to post this one. Since I had some Hershey Kisses leftover from last week I made another batch last night.



Ingredients:
1 cup butter
½ cup white sugar
1 teaspoon vanilla extract
2 cups flour
1 cup finely chopped pecans
1 bag Hershey Kisses

Directions:
1. Cream butter, sugar and vanilla. Mix in flour and pecans.
2. Cover and refrigerate dough until firm about an hour.
3. Preheat heat oven to 375 degrees.
4. Remove wrappers from some of the Hershey Kisses. Take about a tablespoon of dough and wrap it completely around the Hershey Kiss. Place on a greased baking sheet.
5. Bake for 10 to 12 minutes.

*I did not use the whole bag of Hershey Kisses. Just remove the wrapper them as you need them.
*The Hershey Kiss will not melt just become soft.

Pasta Primavera

Ingredients:
1 can cream of chicken soup
1 can cream of mushroom soup
½ cup milk
¼ cup grated Parmesan Cheese
½ teaspoon garlic salt
½ teaspoon pepper
2 cups mixed veggies (I use broccoli and carrots)
1 -2 chicken breast cooked and chopped into bite size pieces
2 cups cooked pasta

Directions:
1. In a sauce pan combine soup, milk, cheese, garlic powder, pepper, veggies and chicken. Bring to a boil over medium heat.
2. Cover and cook for 15 minutes.
3. Stir cooked pasta into soup mixture.

New Design

With fall approaching I thought I would redesign my blog. Fall to me represents warm colors. I have spent the last few days trying to get the colors just right and learning the code used. I think I am close to being done but there still could be a few changes later. I just need a break to rest my brain from looking at code.

Hummus

My hubby makes a great hummus. He has tried many recipes and this one has become his favorite. His only tip is to add the salt slowly or it will become way too salty.

Ingredients:
2 cans Garbanzo beans, drained
1/3 cup Tahini
¼ cup lemon juice
2 cloves garlic
Salt to taste
1 tablespoon olive oil
Pinch of paprika

Directions:

1. Place beans, tahini, lemon juice and garlic into a food processor. Blend until smooth.
2. Transfer mixture to a serving bowl. Drizzle olive oil over mixture. Sprinkle with paprika.
